Creamy Potato Soup
Potato soup was a staple in our house growing up. We lived in Alaska where the days are short, dark, and cold, eight months out of the year. Potatoes were cheap and stored well. And nobody can turn down a steaming bowl (or bread bowl!) of cheesy potato soup. My mom had a recipe for potato corn chowder that she made very regularly. I don’t have that recipe anymore but I developed this recipe to be very similar when I got married. It’s such a simple recipe and it comes together so quickly and with very minimal effort.
If you have the time, pair this soup with homemade bread bowls or homemade rolls, top it with shredded cheese, and of course, if you’re my husband, you’ll add a gallon of hot sauce!
